One large board. Size based on the number of guests. 

A generous, shareable masterpiece served on a rustic wooden board. Guests enjoy this chef-curated selection of premium cured meats, artisan cheeses, seasonal fresh & dried fruits, marinated olives, fig jam, honey drizzle, and crisp crostini. Perfect for cocktail hour or late-night grazing under the stars. Built to spark conversation and delight the senses.

Seafood Paella Station

(+$20 pp  Served with dinner as an additional entree)

Watch the magic unfold as our chef fires up a massive, sizzling paella pan right before your eyes! Golden saffron-infused rice swirls with plump, briny shrimp, tender mussels bursting from their shells, and smoky, paprika-kissed Spanish chorizo. Finished with a shower of fresh coastal herbs and zesty lemon wedges; every scoop is a taste of the Mediterranean meeting the Keys.

Picanha Carving Station (+$12 pp)
Bold flavor and a true “chef-carved” premium feel.

Prime Rib Carving Station (+$15 pp)
Classic wedding luxury and always a showpiece.

Rack of Lamb Carving Station (+$10 pp) 
Tender, upscale, and beautifully presentation-worthy; an instantly recognizable “fine dining” choice with a rich, savory flavor that feels truly premium when carved fresh for each guest.

Raw Bar Splash

(+$35 pp Served with dinner or with cocktail hour)

Oysters on the Half Shell – Freshly shucked oysters presented on a bed of ice, accompanied by a zesty horseradish, fiery Tabasco, and classic cocktail sauce for dipping.
Chilled Peel N Eats – Large, succulent shrimp, perfectly poached and served chilled with fresh lemon wedges and a tangy cocktail sauce.
Ceviche – Fresh, locally-sourced fish bathed in tangy citrus juices, mixed with crisp red onions, juicy tomatoes, and fragrant cilantro, served alongside crunchy plantain chips for a refreshing, tropical bite that bursts with flavor.
Smoked Fish Dip – A creamy blend of smoked fish, folded with select spices and herbs

Lobster Tail Pop-in

Whole lobster tails split and flame-kissed over an open flame until the meat turns pearly and lightly caramelized, then served steaming hot with silky drawn butter and a squeeze of lemon for pure coastal decadence.

0) Buffet Service

Buffet service is not utilized unless requested. We find it looks tired, behind the times and lower quality.

1) Signature Stations Service ⭐

A station-style layout with clear signage and smooth flow. It feels upscale and social.

2)  Tableside Action (Grilling / Carving )

A Live Table-Side Grilling Experience. You create a “wow moment”
(guests see the food finished live at one of the stations). Includes chef. Flat Fee $300

3) 100% Plated Dinner (Add $20 pp)

All courses are served while guests are seated. It can be used for most of the menus.
It is the most formal, traditional dinner experience.
