Whole Hog Roast Station
A show-stopping whole hog, slow-roasted and carved on-site by our chef for an unforgettable experience. Choose from a variety of regional styles to match your celebration. From smoky Carolina BBQ with tangy vinegar sauce, to vibrant Cuban lechón with citrus-garlic mojo, to a Coastal-style roast infused with lemon, herbs, and sea salt, served with house-made sauces, fresh rolls, and classic side pairings inspired by your selected style.
Prime Rib Station
Slow-roasted, herb-crusted prime rib carved to order by our chef. Served with au jus and horseradish cream.
Picanha Carving Station: Brazilian-style top sirloin cap, flame-grilled and carved to order. Served with chimichurri and grilled pineapple.
Garlic-Rosemary Lamb Chop Station
Tender lamb chops seared and roasted to a rosy medium, coated in a savory garlic and rosemary crust. Carved hot, then finished with a refreshing drizzle of mint-chimichurri for a bold, herbaceous finish.
Flame-Roasted Salmon Station
Sides of Atlantic salmon are slow-roasted over an open fire, developing a delicate, buttery texture. Each fillet is glazed with a Key-lime brown-sugar lacquer, then topped with vibrant mango-avocado salsa and served with lemon wedges for a bright citrus pop.
Shrimp & Mahi Skewer Station
Jumbo pink shrimp, mahi-mahi cubes, and sweet bell-pepper ribbons all threaded onto bamboo spears, then flame-seared over an open flame. Served hot off the fire with citrus-garlic butter and grilled lime halves for squeezing.
Seafood Paella Station
Traditional Spanish paella made with saffron-infused rice, succulent shrimp, mussels, and smoky Spanish chorizo. Cooked and served from a large paella pan, finished with fresh herbs and lemon wedges.
